Double chocolate protein brownie bites

This week I am updating an old granola bar recipe in order to make it higher protein as I got a request for a protein bar recipe including vita-fiber.

These are super simple and I threw them together in about 5-10 minutes.

Double Chocolate Protein Brownie Bites

75g Oats
75g (2.5 Scoops) Chocolate Whey Protein Powder
Pinch salt
3 Tbsp Water
2 Tbsp Liquid Vita-fiber/ agave nectar
2 Tbsp Cashew Butter
20g Dark (70%+) chocolate chips

Method

1 - In a blender blitz the oats until you have oat flour

2 - Add the oat flour, protein powder and salt to a bowl and mix

3 - In a small saucepan heat the water and vita-fiber/agave nectar on a low heat

4 - Add the cashew butter and whisk to combine

5 - Pour the wet ingredients into the oat flour/protein powder

6 - Mix to combine, adding a small bit more water if you need to

7 - Chop up your chocolate chips into smaller chips. When the protein dough has cooled add the chocolate chips and fold in. I say fold because this dough is tough!! So don't be afraid, it's ok!

8 - Move to a food mat and knead the dough slightly until smooth. Roll out with a rolling pin to 1'

9 - Chop into bites and enjoy!

These are so delicious and seriously, seriously simple. So please do try them. I will definitely be making them again.
